F&B Director / Manager / Assistant F&B Manager bei The Brasserie - Cayman Islands
The Brasserie Restaurant, Market, and associated outlets, on Grand Cayman, Cayman Islands in the Caribbean, is currently accepting applications for the position of Food & Beverage (F&B) Director for our Cricket Square culinary campus.
A minimum two to four year commitment is required.
Cricket Square Development is a high-end, international executive business park providing office space, F&B services along with entertainment to the world’s top accounting, banking, law firms and other financial services. Cricket Square is expanding its facilities and spaces from approximately 160,000 sq ft to 270,000 sq ft, along with improved amenities, such as a new fitness center, and additional food and beverage outlets.
Cricket Square is home to the highly acclaimed Brasserie Restaurant and Maket,in addition to further outlets in Cricket Square, comprising of:
• The Market, which adjoins the Brasserie Restaurant and provides breakfast and lunch, Bistro style.
• The Wicket providing an outdoor garden bar space offering freshly prepared juices and smoothies during the day and happy hour/private event bar in the evenings.
• Catering services are also provided to offices and our conference room for private function events.
The new facilities coming on-line in 2018 are as follows:
• The Caboose, an open air kitchen and dining outlet, serving American style BBQ, fast casual food. Top of the line J&R and Josper equipment.
• The Cricket Square Conference Facilities, seating 300 persons with pre/post conference spaces and an 1,800 sq ft kitchen.
• The Bake House, a free standing pastry and baking facility a 2,200 sq ft space.
• Brasserie Purveyors, sourcing fine wines, craft beers and artisanal spirits of our exclusive brands.
In addition, our anchor tenant will have a new private cafeteria for 300 staff members in the new building, called SIX, requiring daily catered food service including breakfast and lunch year round and evening meals for 3 or 4 months of the year. Similar opportunities also exist in providing further catering services to tenants at Cricket Square. Our F&B services are well-established with a very loyal and discerning clientele. The Brasserie enjoys a fantastic reputation on the island, voted best restaurant in The Cayman Islands, best place for lunch and best Farm to Table. It features a state-of-the-art exhibition kitchen and an adjacent organic garden. We have our own fishing boats, chicken coop, home to our laying hens, apiary and coconut plantation.
We take local and sustainability very seriously and special attention will be given to applicants with this experience. The position will require strong leadership skills with the ability to mentor and lead high-level positions such as our executive chef, restaurant manager, pastry chef, and events team. This will require senior experience, confidence and ability to inspire the team to provide excellent hospitality, while maintaining a high level of morale. Attention to the fine details is a must.
Chef Dean James Max of DJM Restaurants guides the culinary concept for the entire F&B operation and will work closely with the chosen individual to make sure the project is running at it’s highest potential. Chef Dean is a James Beard recognized chef, who has been with The Brasserie for 10 years and runs multiple restaurants of all types in the US and Caribbean operations.
The successful F&B Director will report to Chef Dean and the owners directly. Experience with hotel event space is a plus, but not completely necessary. Experience in restaurant management is a must.
The successful applicant will:
• Be a highly experienced F&B professional, with an internationally recognized culinary school and or hospitality school diploma or degree in food service management or related field.
• Have working knowledge of various computer software programs (MS office, restaurant management software, POS)
• Have a minimum of 5 years’ previous work experience in a similar environment, for example a minimum 4 star Hotel, in a Managerial Position;
• Have experience in managing and operating conference facilities and large banqueting events.
• Have experience in securing and developing new business opportunities as they relate to catering, including preparing, administrating and managing catering agreements.
• Have very strong managerial and organizational skills;
• Have the ability to spot and resolve problems efficiently;
• Have excellent knowledge in F&B based from high end restaurant experience;
• Have excellent communication skills;
• Have excellent time management skills and the ability to guide others in prioritize their tasks;
• Have the ability to meet financial targets;
• Have the ability to develop and maintain control procedures for all departments;
• Be able to lead the F&B team by attracting, recruiting, training and appraising talented personnel;
• Ability to maintain cleanly - immaculate facilities and personal presentation for self and instill the same for staff members.
• Be able to encourage high employee retention;
• Demonstrate the ability to encourage teamwork and strong relationship with co-workers and management;
• Be able to manage all F&B and day-to-day operations within budgeted guidelines, to the highest standards;
• Report to management regarding sales results and productivity;
• Comply with all health and safety regulations;
• Provide a two way communication and nurture an ownership environment with emphasis in motivation and teamwork;
• Identify customers’ needs and respond proactively to all their concerns;
• Be energetic, enthusiastic and able to work under high pressure;
• Be able to adjust to new cultures and environments;
• Enjoy weekends off;
• Enjoy a tax-free salary.
• Having previous international experience is a plus. English language is required.
Base salary to start US$9,000 – US$12,000 per month depending on experience.
